In 1985, Chantal and Jean Berthet-Bondet purchased a forgotten winery in the Jura region of France that dates back to the 16th century and they spent the next 10 years bringing it back to life. The Domaine spans 24 acres on Jura’s finest appellations. The Berthet-Bondet family went on to become one of the top producers in Jura, creating benchmark wine from that region.

PLACE

Jura is most famous for purposely-oxidized white wine and extreme wine making techniques. This tiny wine region, located at the foot of the Swiss Alps in France, has been producing some of the world’s most unique wines for hundreds of years. The classic wine of Jura is “vin de voile,” which is a similar technique used to make Sherry. During the ageing process barrels are only partially filled so as to purposefully oxidize the wines. This results in flavors resembling dried fruit and nuts. 

PAIRING

The grapes that compose this wine are 85% Chardonnay, 5% Savagnin, 5% Poulsard and 5% Trousseau from 12-year old vines. This gives us aromas and flavors of citrus and white flowers with a clean and refreshing finish. Try pairing it with breakfast like pain perdu.

TAKEAWAY

This sparkler shows us another side to Jura with a pure expression of sparkling wine made in the traditional Champagne method. Its fine bubbles make it a lovely alternative to the wines of Champagne.
