WINE: The Tissot family have been making wine in the Jura region since 1956, and have been a strong presence in representing the region's terroir. Stéphane Tissot creates a variety of wines that are expressive of the region's unique winemaking traditions. Their vineyards are cultivated bio-dynamically, with no chemical pesticides or fertilizers. The Tissot's are definitely considered one of Jura's most iconic producers.

PLACE:  Jura is most famous for purposely-oxidized white wine and extreme winemaking techniques, this tiny wine region at the foot of the Swiss Alps in France has been producing some of the world’s most unique wines for hundreds of years. The classic wine of Jura is “vin de voile,” which is a similar technique to the wines of Sherry in Spain. During the aging process barrels are only partially filled so as to purposefully oxidize the wines. This results in flavors resembling dried fruit and nuts. This wine is located in the sub-region of Montigny-Les-Arsures.

PAIRING: This wine is made from Chardonnay and Pinot Blanc grapes. The Tissot Crémant du Jura "Extra Brut" is reminiscent of classic Champagne on the nose with notes of crème brûlée, lemon peel. The palate offers almonds, honey, white flowers and a dry but soft, frothy finish. Pair this with flaky mushroom tarts, or simply as an aperitif. 

TAKEAWAY: This sparkler shows us another side to Jura, being clean and crisp. Its fine bubbles make it a lovely alternative to the wines of Champagne.
