WINE: Billecart-Salmon has been around since 1818, when Nicolas François Billecart and Elisabeth Salmon founded this glorious Champagne House. Since then, every member of the Billecart family has been committed to continue the family tradition by creating the highest quality Champagne possible.

 

PLACE: Located in the heart of Champagne in the village Mareuil-sur-Ay. The Estate harbors a garden was that was redesigned in 1926 by Charles Roland-Billecart. The idea was to create a garden in heart of Champagne as their House lies in the heart of the village. The garden was destroyed in 1999, when a storm took down the remaining old trees, leaving only one chestnut tree (soon to be 200 years old). Francois Roland-Billecart, then enlarged his grandfather’s garden and brought it back to life. He went on to entrust his sister Véronique Roland-Billecart with the family garden. From 1818 until now, each generation has invested in the preservation of this garden and in the production of quality Champagne.

 

PAIRING: The Brut Rosé is a blend of roughly 50% Chardonnay, 35% Pinot Noir, and 15% Pinot Meunier vinified as red wine. This is a very elegant rosé, with an orange-pink hue. This special Champagne is dry and crisp with notes of strawberries, rose petals, and orange zest.  This is the perfect appetizer wine, pairing well with mini quiches, cheese and Charcuterie or crostinis.
